Young, creative and effusively enthusiastic about food, David Palacios renounced a career as a commercial airline pilot to pursue his culinary passions. David honed his cooking skills training in Maastricht, Netherlands where he developed the gourmet flair to match his creative instinct. David then moved with his family to Andalucia where he grows fresh organic produce and edible flowers for use in his gourmet creations.

David has developed a number of unique dishes especially for guests at Cortijo El Carligto, while the seasons often dictate the ingredients and atmosphere for each meal.

He is keenly aware of the rich and vast variety of artisanal products Andalucia is so famous for, and these delights he brings to your table. Opt for four to six course meals prepared in-house or go for an eight course degustacìon menu to sample a variety of these exciting dishes.
